Our offer
Brasserie du Château
In the brasserie, we serve classics of French brasserie cuisine from moules marinières to entrecôte cafe de Paris and Ile flottante, the latter of course in keeping with Bottmingen Castle. Market-fresh and high-quality seasonal ingredients are a matter of course for Executive Chef de cuisine Guy Wallyn: "I was born in France, so French brasserie classics are particularly close to my heart." He is proud to open up the gastronomic range with his long-standing kitchen team and celebrate brasserie cuisine alongside gourmet cuisine. Wallyn's long-standing sous-chef Xavier Lambert has been promoted to head chef of the brasserie.
Uncomplicated enjoyment
Host Peter Kapral: "The ambience in the castle is magical in the truest sense of the word, and the brasserie is particularly appealing." The Brasserie du Château, located on the first floor, is intended to be both a complement and a counterpoint to the gourmet restaurant and, with its simple, entertaining menu, to facilitate less formal access to Bottmingen Castle for a broader gastronomically interested public. At lunchtime for an uncomplicated plate as well as in the evening for a cozy multi-course meal. Brasserie dishes now also complement the castle's banquet menu. The brasserie can also benefit from the renowned high-quality wine cellar of the Louis gourmet restaurant.
